Most people have opened a tin of tuna. Very few have opened a tin of grilled sea cucumber.

Join us at The Last Supper for an intimate guided tasting celebrating the remarkable world of premium conservas.

This is not your average seafood lunch. It's an opportunity to discover some of the world's most sought-after preserved seafood from Australia, Spain and Portugal, with each course showcasing exceptional producers and the unique traditions behind their craft.

Throughout the afternoon, each unopened tin will be presented to the table as we explore its story, where it comes from, how it's produced, and what makes it so highly regarded. The seafood will then be simply plated and served, allowing the quality of each ingredient to speak for itself.

Your tasting journey includes:

  • Victorian Tiger Abalone

  • Razor Clams with Sea Spaghetti

  • John Dory in Mint Sauce

  • Cuttlefish in Algarve Sauce

  • Monkfish Liver, often referred to as the "Foie Gras of the Sea"

  • Gueyu Mar Grilled Sea Cucumber, one of the rarest and most extraordinary delicacies of the afternoon

Each tasting will be accompanied by thoughtfully selected bread or simple accompaniments designed to complement, never overpower, the seafood.

A selection of wines will be available to purchase from the bar, with recommended pairings for those wishing to enhance the experience.

With just 10 guest seats available, this is a rare opportunity to explore ingredients that are almost impossible to find on Australian tables.

Please note: This is a guided tasting experience featuring small, carefully considered portions of premium seafood, rather than a traditional long lunch.
