Celebrate winter’s most luxurious ingredients at Firma Italian, as we welcome Debs Oliver – affectionately known as Lady Truffle – for a one-night-only showcase of Western Australia’s finest black truffles, paired with a curated selection of exceptional wines from the Margaret River region. Known nationally as a champion of Australian truffles, Debs brings an infectious passion and deep expertise to the table. Her ability to source and celebrate the best of WA’s seasonal bounty makes this event a rare opportunity to indulge in the earthy elegance of freshly harvested truffle at the height of its season.
Each course is paired to perfection with wines from four of WA’s most acclaimed producers. Cullen Wines, a biodynamic pioneer led by the award-winning Vanya Cullen, brings a legacy of sustainability and prestige. Pierro is celebrated for its innovation and standout Chardonnay, consistently ranked among Australia’s finest. Leeuwin Estate, internationally renowned and home to the Art Series Chardonnay – a wine awarded 98 points – reflects decades of winemaking excellence. Amelia Park Wines, a rising star, has earned multiple trophies and 5 Red Stars from Halliday’s Wine Companion, representing the new generation of Margaret River talent.
The menu is a masterclass in balance and indulgence, featuring dishes such as truffle mozzarella in carrozza, seared scallops with pancetta and truffle butter, and slow-cooked wagyu short rib with gremolata and Barolo jus. Each plate is layered with the unmistakable depth of WA truffle and thoughtfully matched with wines that enhance and elevate every bite.

Debbie Oliver
Founder and Director, Lady Truffle Fine Foods
Debbie Oliver, also known as “Lady Truffle,” is a prominent figure in Australia’s gourmet food scene. She is the founder and operator of Lady Truffle Fine Foods, a boutique supplier specializing in premium truffles, caviar, and other fine foods. Based on the Gold Coast, Debbie serves clients across Brisbane and the Gold Coast regions .
Debbie’s journey into the fine food industry began after a career in the corporate sector. Her passion for community, fine foods, and the dining scene led her to establish Lady Truffle Fine Foods in 2016 . The business sources both local and imported truffles, including varieties like Italian Alba, French Périgord, and Australian black winter truffles. In addition to truffles, the company offers a range of gourmet products such as caviar, foie gras, wild mushrooms, and specialty ingredients .
Beyond supplying fine foods, Debbie is actively involved in educating others about truffles. She conducts workshops, masterclasses, and staff training sessions for chefs and food enthusiasts. Her expertise has been showcased in events like the six-course truffle degustation at Citrique, JW Marriott Gold Coast Resort & Spa and the “Allure of the Truffle” masterclass at the Taste Port Douglas Food & Drink Festival .
Debbie also owns a boutique trufferie featuring pine, oak, and hazelnut trees that produce black winter and Bianchetto spring white truffles. She offers annual country truffle tours for chefs and foodies, further sharing her passion for truffles and supporting local farmers .
