Join us for an exclusive tasting event exploring how minerals in water dramatically shape the flavour profiles of specialty coffee. Presented by Zest Coffee, a leading Melbourne-based specialty coffee roaster, and APAX LAB, creators of mineral blends trusted by the world’s best cafés and baristas, this interactive session will showcase how the same coffee can express multiple distinct personalities depending on the water used.

Led by Simon Gautherin, water chemistry expert and Q Arabica grader, participants will:

Experience a guided tasting of multiple specialty coffees brewed with different water mineral compositions.
Taste some exciting Australian-grown coffees alongside Zest Coffee’s curated selection of premium Colombian coffees.
Discover firsthand how specific minerals enhance or diminish acidity, sweetness, body, and other coffee attributes.
Gain practical insights into optimising water chemistry for outstanding coffee flavour.

The tasting will be followed by an interactive Q&A session, where Simon will address your questions and share deeper insights into the fascinating intersection of coffee, water, and flavour chemistry.
