Caribbean Cuisine: Rice & Peas, Cabbage and Curry Chicken

About the Class: 

In this hands-on class, particiapnts will learn how to prepare popular Jamacian dishes from scratch with Chef BigWayne, owner of Chef BigWayne Jamacian Cuisine in Allentown! Spend the evening with Chef BigWayne learning how to make fluffy Rice and Peas, flavorful steamed Cabbage and savory Curry Chicken. Participants will also have the chance to learn the components of a curry spice blend and make their own,

About the Instructor: 

Born in Jamaica, Chef BigWayne's culinary journey began with his grandmother by watching and spending time with her in the kitchen. He then started cooking for friends and family and with the help of his sister attended culinary school. From there he worked in a meat shop, then at a hotel where he worked his way up as a dishwasher, to cook then a supervisor. Him and his wife came to Buffalo in 2023 and were able to share recipes with Buffalo through private dinners, catering, cooking classes and at the West Side Bazaar in 2024. In April of this year, Chef Big Wayne followed in his grandmothers footsteps and opened his first brick and mortar restaurant in Allentown filled with dishes from his childhood.

About the Venue: 

Parking: Starting at 6 pm, you cannot park on the south side of Massachusetts Avenue (same side of the street as our building entrance). The parking rule changes right at 6pm, so we encourage arriving a little early to ensure you are parked on the correct side before class starts. There is usually parking available on side streets, Shields and Brayton, or further down Massachusetts Ave.
