Event description

Please join us for a two (2) hour demonstration to witness how to make authentic French croissants from scratch. 

Alain Marec, your instructor, is a French born food scientist and home baker who will show you how to create a wonderful batch of French croissants or pain au chocolat. 

During the event, Alain will demonstrate the entire process of making croissants and pains au chocolat including: making the détrempe (dough), beurre de tourrage (butter layer), laminating simple and double folds finally shaping croissants/pains au chocolat.

During the two (2) hour demo class, each guest will receive:

  • A demonstration by Alain of all the steps of croissant making.
  • A general to technical explanation of French pastry (based on guests interest) including - selection of ingredients,  basic understanding of making pastry: mixing, lamination process, shaping, importance of time and temperature,  principles of fermentation, food safety etc...
  • A presentation hand out of the process shown during the event (to make your own croissants at home)
  • A gift box with 4 medium sized croissants and pains au chocolat (2 of each) baked just before (or during) the event.
  • Questions & Answers throughout the class.
  • An adult beverage from a list curated by Canal Tavern is included in the cost of the event (additional beverages can be purchased from the bar of the venue).
