Diwali at The Sydney Nest, a supper club event for the festival of lights

Diwali, when homes glow with diyas, sweets get passed around, and the table never stops filling. It’s also the hardest time to be away from home.

This supper is my way of bringing that feeling to Sydney: an intimate table and a five to six course feast of festive memories reimagined in ways you’ve never seen before.

The Sydney Nest is a modern Indian supper club run by me, Kanika Gadyok, a MasterChef Australia alum with Delhi roots.

Growing up in Delhi, the dining table was where the family gathered, where culture was handed down without anyone ever calling it that. The Sydney Nest is my way of keeping a piece of that table here.

I take the memory of a dish and reimagine it in a way you’ve never seen before. I love to create a plate that makes you say “wait, what?” before you say “more, please.”

Each dish is built from scratch, the masalas, chutneys and pastes. I keep the flavour of the base recipe true to where it came from, then shift the form: ravioli, mille-feuille, tacos and granitas. Inspired by my grandmother, by my father’s bakery, and by everything I’ve learnt along the way.
