Join Audrey for a hands-on Sourdough Focaccia Workshop and discover the secrets behind this delicious, naturally leavened bread.

What to Expect

Each participant will mix their own sourdough focaccia dough by hand.

Together, we’ll explore:

What sourdough is and why it’s so special
The benefits of baking with natural fermentation
The basics of mixing, stretching and folding (or coil folds)
How to build gluten strength and prepare for cold proofing

You will also bake a batch of sourdough focaccia prepared in advance, so you can see exactly how the dough should look and feel when it’s ready for the oven.

You’ll then transfer your own mixed dough into a tin to take home, ready to proof and bake the next day.

Everything is provided — ingredients, tools, and packaging — just bring your enthusiasm (and maybe a friend to share the bread with!).

Please note: We will briefly cover sourdough starter basics during the workshop, but this class is not focused on starter maintenance or creation.

The main focus is on sourdough focaccia dough, fermentation, shaping, baking, and topping techniques.

If you’re looking for an in-depth sourdough starter class, a dedicated workshop will be offered separately.
