Our experts will walk you through where to source the creamiest; the clearest; the tastiest of oysters that Australia has to offer and when. Delve further into Sea-spiracies and sustainability while learning how to get the best dish out of a whole fish.
This lunch gives you the knowledge to adorn your dinner table with the best of Australian seafood.
Our executive chef Tim Searle & his guest seafood specialists will walk you through your lunch courses, sharing the knowledge they have gathered from years of working with Aussie produce.
Begin with an unveiling of the different flavour profiles of oysters from around Australia so you can appreciate their nuances, while learning how to shuck them for yourself (and your friends!). This will guarantee the freshest of this seafood delicacy is at your fingertips at home.
Enjoy the showcase as the art of slicing fish is put on display. Absorb and question the process so you know what part of your catch is best for your dinner, while taking in how to use every part of your catch to create signature dishes that will blow you away!

- 1st Course: 3 Oysters and a Barramundi wing
- 2nd Course: Kokoda Ceviche
- 3rd Course: Big Fish steak, truffle oil frites, beer mustard, fish jus, Nauti butter
- 4th Course: Nauti Creme Brulee
- Accompanied by 2 glasses of paired wine.
Single Ticket upgrades: add a cocktail finisher for $15; an extra 3 oysters for $10; or both for $22.5.
