Robbie is the owner of Shavano, Salida’s casual fine dining restaurant overlooking Riverside Park.

Before opening Shavano, Robbie left a successful career in Austin’s food scene—where he launched acclaimed restaurants Bufalina and Bufalina Due—to pursue ultra-endurance running. His achievements include:

•     Running across the United States

•     Completing the 62-day Colorado Crush challenge in the Rockies

•     Setting the record for most laps around Central Park in a day

•     Placing 2nd in The Speed Project, a no-rules race from LA to Vegas

Nearly four years ago, Robbie and his wife moved to the Arkansas River Valley. In March, they opened Shavano: more than a restaurant, it’s a gathering place that reflects the land and fosters connection over intentional cuisine and elevated libations.

Robbie will share his journey from running to restaurateur, his vision for Salida, and his love for the valley we call home.
