THE LOBBY Fireside Chat & MeetUp Monthly Series

Join us for an inspiring happy hour at THE LOBBY of the Palace Hotel!

This is the perfect opportunity to unwind and build meaningful relationships while learning about local initiatives. Whether you're a local professional, entrepreneur, remote worker, or a like-minded person who would trade comfort for adventure, this event is for you.

Our September meeting features Robbie Balenger.

Robbie is the owner of Shavano, Salida’s casual fine dining restaurant overlooking Riverside Park.

Before opening Shavano, Robbie left a successful career in Austin’s food scene—where he launched acclaimed restaurants Bufalina and Bufalina Due—to pursue ultra-endurance running. His achievements include:

Running across the United States
Completing the 62-day Colorado Crush challenge in the Rockies
Setting the record for most laps around Central Park in a day
Placing 2nd in The Speed Project, a no-rules race from LA to Vegas

Nearly four years ago, Robbie and his wife moved to the Arkansas River Valley. In March, they opened Shavano: more than a restaurant, it’s a gathering place that reflects the land and fosters connection over intentional cuisine and elevated libations.

Robbie will share his journey from running to restaurateur, his vision for Salida, and his love for the valley we call home.

Save the date for upcoming Fireside Chats on the 4th Wednesday of each month.

THE LOBBY is an inclusive support system for entrepreneurs, adventurers, creatives, innovators & game-changers in rural Colorado.

THE LOBBY offers private workspace on a monthly basis and first-come-first-serve Flex Desks with a breathtaking view of Riverside Park and a fully stocked break room complete with fresh coffee, hot tea and snacks.
