Travolo 2.0
A Pop-up Restaurant Experience at Timbermill, Bulli
This August, Travolo returns for its second intimate dining event — a one-night-only, 6 course feast where food, art, and conversation come together. Inspired by tavolo, the Italian word for table, Travolo is a travelling chef’s table experience, this time set in the industrial charm of Timbermill Gallery Studios, Bulli.
Guests are invited to gather around one long table and enjoy each dish served directly by the chef, Gill Dinh, MasterChef Australia Top 10 contestant from season 16 (2024). The menu celebrates seasonal local produce with bold European and Asian influences — from parmesan polenta and bresaola, to smoky charred squid, tamarind-caramelised pork belly, and a soft Italian cream bun with tangy rhubarb to finish.
Expect a night of shared stories, lingering flavours, and a meal that moves between tradition and playful reinvention.

Drinks: A selection of wines, cocktails, and non-alcoholic beverages will be available to purchase on the night.
